Step One for Beginners: Change in Diet

Beginner Step 2 to Reversing Diabetes and Living Longer: Week One
Eat a green salad every day this week. Cut down on carbs. It would be great if you could buy organic vegetables for your salad and make it at home but if you must eat out, try to find a place that uses organic vegetables. A few alfalfa sprouts with some chia seeds will add to your green and red colors (tomato, red and green pepper slices, arugula, Romaine lettuce, (iceberg is less nutritious), mushrooms and onions. I like some ground or chopped almonds. Here’s a recipe for healthy dressing from a video by Joel Fuhrman on Dr. Fuhrman’s Secrets to Healthy Cooking. It’s found as well in his book The End of Diabetes.
Russian Fig Dressing/Dip
5 Tablespoons of low- or no-salt pasta sauce
2 Tablespoons fig vinegar or balsamic vinegar
3 Tablespoons raw almond butter or 1.5 ounces raw almonds
2 Tablespoons of raw sunflower seeds
Blend all ingredients in a food processor or high-powered blender until smooth. Serve, or refrigerate in an airtight container for up to 4 days.
That’s really a baby step. We want to try a vegetable juice fast eventually. Let’s assume you are a beginner in the field of cleansing your system of empty carbs and animal products. Don’t panic at the “F” word. Fasting isn’t scary and it can be a matter of not eating between your three meals. It can be giving up dinner once a week allowing the body to experience hunger. That is not a bad thing. As I’ve said in other posts, always check with your doctor before making changes in your diet if you are on medication. (While you’re chatting with him, ask him how many semesters of study were dedicated to nutrition and the effect of diet on disease. And ask the name of his/her college or university. Beginner Step 3: Week One
Walk, ride bike, dance, or do some upper body work with a home video for at least 20 – 30 minutes three times this week. Find a friend to join you and make it fun.
